Allergens in food

It is important you know what your legal requirements are when it comes to serving and preparing food that contains allergens. There are 14 allergens that you need to know where they are in the food you serve and have further controls in place if you prepare food for a person who has an allergy.

Guidance for food businesses is available on the Food Standards Agency website at www.food.gov.uk/business-guidance/allergen-guidance-for-food-businesses.

In addition, Derbyshire Trading Standards with Amber Valley Borough Council and South Derbyshire District Council are launching a video, poster and management checklist to raise awareness of the legal issues around serving food that contains allergens. The new video (shown below) is easy to follow and shows the major areas to think about in your food business when serving foods containing allergens. It will be of use as a starting point to finding out further information and can also be used as a reminder of the controls needed for staff.
